Happy Valentine’s Day! In honor of this day of love, I have a beautiful red juice recipe for you. That gorgeous red color come from beets. And what’s more appropriate for Valentine’s day than beets? Everyone’s favorite vegetable. But really beets are pretty amazing, not just for the color that they impart but also for their nutritional benefits. Chock full of antioxidants and anti-inflammatory compounds, beets have it all. Concentrated forms of beet juice are even gaining popularity in endurance athlete circles as it is said to increase athletic performance.
But back to this juice, it’s got a nice kick from the ginger, a creaminess from the carrots, and earthiness from the beets. So all together it works!
I’m not a huge juice drinker but I do enjoy fresh squeezed juice every now and then especially when it tastes like this!
I used a juicer but if you have a high speed blender that would also work. Just pour through a fine mesh strainer before serving.
